Tomato Crushed Technology Demonstration Unit

 

Processing of crushed tomato:

Crushed tomato paste is made from the ripe tomatoes and cooking/ concentrating them for several hours. It is a thick, dark red concentrate. Crushed tomato paste is made from whole processing of tomatoes. The industry normally refers to TSS (total soluble solids), a measure which excludes all insoluble solids. In accordance with generally accepted market standards, crushed tomato paste must contain higher TSS. On average, 3 kg of fresh tomatoes are required to make 1 kg of crushed tomato paste. 

 

This above technology aims at processing and preservation of glut season tomato for use during the off-season. Hybrid tomatoes, suitable for the production of tomato concentrate/ paste, are made into pulp in a fruit mill. The pulp is concentrated to crush tomato paste in an open steel vessel / a steam kettle. Add preservative and packed for storage.

Tomato pulp concentration to 33 percent or more of solids, it is called concentrated tomato paste.

Pilot Scale Production of Crushed Tomato Paste:

1. Product. Crushed tomato paste is a thick paste made from ripened tomatoes with skin and seeds.

2. Raw material. The preferred raw material is processing tomato of 56.5 Brix, but consumption tomato is higher Brix, often used.

3. Processing ratio. 3 kg of tomatoes are needed for 1 kg of crushed tomato paste. The sugar content (measured in Brix) of the raw tomato, the better/ lower the processing ratio.

4. Production process. After washing and shorting, the tomatoes are crushed by a fruit mill. The pulp is transferred in a heat exchanger. Water is evaporated from the pulp. Once the paste has the required concentration, measured in Brix, paste transferred in vassal and coo it. After cooling the paste, preservatives add in crushed tomato paste.

5. Packing and storage. After that, crushed tomato paste packed in jar and stored in cool and dry place.
